Paletas de pepino limon (cucumber lime popsicles) are a Mexican summer treat! They are such a refreshing bite and all though summer is winding down my Armenian cucumber plants are not slowing down. We are soaking every bit of sunshine with these paletas de pepino limon in hand before the summer ends. This is one way to use up all the surplus of cucumbers that the garden is throwing my way that the whole family enjoys. Armenian cucumbers are my staple cucumber to grow they are heat tolerant and extremely prolific. In another post I will go into detail on how to grow them in the garden.
These paletas de pepino limon can be made using what ever cucumber variety you have on hand. They are both deliciously sweet and tart. The addition of chamoy and tajin gives it a slightly spicy and tangy flavor. Making popsicles at home has the added benefit that you can control how much sugar goes into your treats! For the molds they do sell actual paleta molds but if you don’t have those on hand you can use any small cups and popsicle sticks (that’s what I did)

Paletas de pepino y limon
Ingredients
- 1/2 Cup Water
- 4 Cups Cucumbers
- 1/4 Cup sugar
- 1 tsp salt
- Zest of one lime
- Juice of 3 limes
- 3-4 tbsp Chamoy
- sprinkle Tajin
Instructions
- Start by peeling and deseeding the cucumbers. Cut them in small pieces and place in blender
- Also add in the zest of one lime and the juice of 3 limes
- Add in sugar, water and salt and blend well.
- to prepare them for the freezer add a splash of chamoy to the bottom of the mold you are using and fill mold to top with the cucumber lime mixture.
- totally optional to sprinkle some tajin before sticking it in the freezer!
- Let completely freeze and enjoy!
