Blueberries and Lemon

All the lemon flavor in this recipe comes from the source, good ole’ lemons. I am using lemon juice and zest to infuse all that lemony goodness and brightness into the loaf. The acidity in the lemon juice also helps the blueberry marble part of the loaf, end up bright and purple instead of dulling to an almost blue gray.

Blueberries are such a versatile fruit, I would even dare call it natures candy! They are packed with flavor when they are picked at the right time and there are so many varieties to choose from! They pack a punch in the nutrition department, blueberries are a good source of fiber and one single cup delivers almost 25 % of the daily Vitamin C requirement. I can snack on them all day long, but they are also a wonderful addition to baked goods, smoothies, even savory sauces.

What makes a “Marble” loaf?

What exactly is a marble effect? The marbling technique is often used with a vanilla and chocolate cake. You get the best of both worlds the batters are layered and swirled into the cake pan, alternating between flavors the end result looks impressive when it is cut into. It is a simple technique that brings the wow factor. There are endless flavor combos. This Blueberry and Lemon Marbled loaf may just be the prettiest and tastiest combination of spring.

Most marble cakes or loafs start with a single batter base that is separated into two different flavors, usually by adding in fruit or flavorings such as cocoa powder for the vanilla/chocolate cake. In this case the base for our Marbled Blueberry and lemon loaf is the lemon batter that is thick and creamy. To make the blueberry part of the marble loaf we reduce blueberries with a bit of zest, lemon juice and sugar, that bring out the flavor and color of these delightful California blueberries. The blueberry “jam” reduces and cools it is added to the reserved batter! The two batters are ready to be swirled into the loaf pan to get in the oven. Prepare for your house to smell amazing! and get a pot of coffee going.

California’s Ideal Climate to Grow Blueberries

You would be surprised to know how many different varieties of blueberries there are out there, especially when you grow your own. This is my cue to bring up gardening ahemmm 🙂 Who wants to go blueberry bush hunting? With blueberry names like pink lemonade, jewl, jellybean, blueberry smoothie you can just imagine the range of colors, sizes and flavor profiles these delicious berries come in. I always think the bushes double as an ornamental as their foliage changes throughout the season. It is important to look for varieties that are adapted to your specific region. Some varieties are better adapted to coastal regions other can handle the Valley heat. Blueberries require acidic, well drained soil to thrive, but once you get them going they can produce for years!

Fun fact: Although most blueberry bushes are self-pollinating planting two or more varieties increases yield and size!

If you want to skip the growing part you’re in luck because California Blueberry farmers have been doing it for years and know how to grow a delicious crop. Ingredients:

Fresh California Blueberries– Fresh blueberries are front and center bringing in their sweet and tart flavor. They are a pop of delicious goodness. Look for the CA GROWN label to get the best quality blueberries and the best tasting!

California Blueberry season runs April-June. Although blueberries grow throughout our state, the bulk of blueberry farms are in the San Joaquin Valley. Blueberries are ripened on the vine and this delicate fruit is hand picked fresh by skilled farm workers, they are truly a labor of love

All purpose Flour- The base for our loaf and the starting point to build this delicious dessert.

Lemon Juice â€“ the lemon juice will bring out a vibrant shade of purple from our blueberries and help maintain it throughout the baking process. As well as adding that natural lemon flavor and fragrance with the help of the zest.

Baking powder- Leavening agent for our Blueberry and Lemon Marbled Loaf. This helps it to be soft and just the right amount of rise.

Cream cheese- Adds in extra richness and creaminess it gives the batter a smooth and velvety texture.

Unsalted butter- Adds in richness and the fat content in the butter makes for a melt in your mouth bite with a delicious crumb.

Eggs- They add structure and helps everything hold and blend together.

White Granulated Sugar- The sweet component will come from regular sugar in the batter as well from the natural sweetness in the blueberries.

Salt-Balances everything out and makes flavors pop.

Have your ingredients at room temperature before you get everything going. This will make for a batter that is smooth and doesn’t have large clumps. It will bake evenly and rise properly.

Ingredients
  

  • 1 Cup CA GROWN Blueberries
  • 1 1/2 Cup All purpose Flour
  • 2 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 Cup Sugar + 2 tbsp sugar for blueberries
  • 4 oz Cream Cheese
  • 4 oz Unsalted Butter
  • 4 Eggs Large
  • 1/2 C Lemon juice 2 large lemons or 3 medium
  • 2 tbsp Lemon Zest

Equipment

  • 1 Stand Mixer OR Hand held mixer

Method
 

  1. Pre heat oven to 350 °F
  2. Begin by zesting the lemons. Place the zest into a small dish.
  3. Squeeze the lemons and reserve the lemon juice it should yield 1/2 C lemon juice.
  4. Next place the fresh blueberries into a saucepan with a pinch of lemon zest, 2 tbsp lemon juice and the 2tbsp sugar. On medium heat let berries reduce. As they heat they will soften and burst releasing all the pulp and color. If there are berries that need a little help. With a spatula being smashing and incorporating everything. Let it bubble on medium high and turn off once it bubbles and starts reducing.
  5. In a stand mixer bowl cream the butter and cream cheese until smooth.(room temperature to avoid clumps)
  6. Add in the sugar and zest to the bowl and beat until well incorporated and mixed.
  7. Add in eggs (room temp) one at a time and mix until combined.
  8. In a bowl add in flour, baking powder and salt. Set aside.
  9. Add in half the dry ingredient mixture to the wet ingredients and mix. Alternating with the lemon juice. Repeat until all is incoorporated.
  10. Once the batter is smooth reserve one cup of the batter into a bowl, and mix in cooled blueberry "jam"
  11. Butter a loaf pan and begin to alternately add between the lemon batter and the blueberry batter. Bake for 1 hour 5 minutes or until a toothpick comes out clean
  12. Let loaf cool before taking out of the pan. Slice and enjoy!!
